Harvesting Overview

Selective Picking

We hand pick our coffee targeting only cherries that are bright red, reflecting peak ripeness. This ensures sweeter and more complex flavors. We harvest throughout the year allowing the fruit to reach it's maximum potential. This also allows us to monitor the health of each tree, which is crucial to maintaining the quality of our coffee.

Wet/Washed Process

After harvesting we sort the cherries for consistency of ripeness and then run them through our pulper (it squeezes the cherries until the seeds pop out). We then wash the extracted beans while removing any defective ones (they float!). The remaining beans are then soaked overnight to loosen the outer layer of the bean, which is rinsed away before drying.

Sun Dried

Finally we lay our beans out in a single layer to dry. Over the next 7-8 days we continuously hand sort the beans, removing any defects, and ensure they are evenly dried resulting in a perfect roast.
